The ones that I was specifically concerned about were:

  rpcidmapd rpcgssd portmap

However, on further research it appears that I can safely turn these off.

I'm also considering whether I can turn off the following services:

  acpi   -  I already turn off acpi on the kernel boot line. So it should
            be harmless to remove the acpi daemon as well.

  atd    -  I doubt that we will need the "at" facility for anything.
            Note that I am leaving cron and anacron in place, to support
            periodic housekeeping chores.

  cpuspeed - This regulates the CPU speed according to load, and thus
             potentially reduces power-load and heat dissipation. I can't
             decide whether this is worth keeping or not.

  haldaemon - This apparently supports hotplugging and removable media,
              which we don't care about. So I can presumably remove it
              without causing any problems.

  messagebus - This supports messaging between programs, over dbus.  I'm
               wary of turning this off, since I don't know if any
               important programs use dbus.

Note that the services that I turned off yesterday were:

   bluetooth cups gpm sendmail isdn kudzu mdmonitor netfs nfslock rhnsd pcmcia
