This is curious to say the least.  You might want to plot real versus imaginary.  You seem to have peaks in amplitude at plus/minus 45 and 135 degrees.  Is it possible that the noise is so high in individual channels that they scatter all over.  Try looking at the spectrum with only a little time integration and only 1 baseline at a time (AIPS task POSSM for example).  Averaging all channels still seems rather too noisy.  Try plotting averaged amplitude versus uv distance or other parameters.
