You are vague about what programs are doing the plotting:

1. ISPEC (and RSPEC) have the DOPRINT option.  Set it to -2
   and set OUTPRINT for a text file.

2. SLICE has the OUTTEXT option for much the same purpose
   is you are making a slice along the V axis of a cube.

3. POSSM has an OUTTEXT option also.

4. BLSUM has an OUTPRINT option.
